Leese-Fitch - Cabernet Sauvignon

Dark garnet in color, the 2009 Cabernet Sauvignon blend presents aromas of fresh roasted hazelnuts, espresso, cherry liquor, and black currants. In the mouth, this Cabernet blend exudes deep blackberry notes with toffee, dark cherry, Dutch cocoa, tea leaf, and fig compote. On the finish, there are rich tannins, caramel oak notes, toasted coconut, and black raspberry with mouthwatering acidity. Our Monterey Cabernet was sourced from a warm vineyard on the northeastern side of Monterey County. This fruit was the last of our 2009 vintage to come off the vine, as a result, produced wines with a lot of color and brilliant fruit. 2009 Paso Robles Cabernet contributes depth and mouthfeel as well as dusty Paso Robles terrior that comes across in the brambly nature of this blend. The Clarkburg Cabernet came off the vine at the end of October and didn’t miss a hitch; this leg adds structure to the blend. River Junction Cabernet adds ripe blackberry flavors, with the addition of River Junction Syrah, to round out the tannins and add cherry fruit notes. Monterey Tempranillo brings tea leaf flavors and good terrior influences. Last but not least, Lodi Alicante Bouchet and Petite Sirah add great color to the overall blend.

The Crusher - Petite Syrah

2008 Clarksburg Petite Sirah
The Crusher Petite Sirah 2008 pours a dark, inky purple— classically Petite Sirah. Breaking away from other hard, heavy Petite Sirahs, this wine’s aroma leaps out of the glass with fresh blackberries, toasted walnuts, and a toffee-like edge. It is incredibly aromatic and bright, like smelling a fresh rose. The wine transitions on the palate to rich, creamy blueberry flavors, a full-bodied, milk chocolate mouthfeel, and caramel oak nuance. Rich and soft, it evokes thoughts of cocoa butter and nutmeg. Velvety, mouth-filling tannins lead to a faintly sweet, strawberry finish. The bright, juicy fruit flavors of this wine are nicely balanced by its darker, caramel flavors and well integrated oak.
Mushu pork or Szechwan beef with a sweet chili sauce would be excellent pairings with the dark but aromatic qualities of this Petite Sirah. A plum sauce would also marry with this wine particularly well. For backyard grilling, a juicy sirloin burger with Sonoma jack cheese often pairs well with red wine and our Petite Sirah would be a fantastic example of this combination. Try this for dessert: spiced poached pears with the wine left over after dinner. The rich, dark, creamy flavors of our Crusher Petite Sirah will meld with the pears and take this dessert to a whole new level.
Sourced from the upcoming Clarksburg appellation, The Crusher is a tribute to the fundamental relationship between the grower and the winemaker. From the vineyard to the crusher to your table, The Crusher captures the freshness of this world-class growing region, which is just beginning to emerge on the wine scene.

Stock & Stein - Dry Riesling

The grapes are harvested by hand and by machine. The
grapes are then pressed immediately and the grape juice is
fermented with the natural yeast and stored in stainless steal
tanks. The young wine is handled absolutely naturally in
compliance with the phases of the moon. No finings were
used. The Riesling matured with the yeast over 5 months
and after beeing filtered it is bottled end of April 2011.
The stimulating Stock & Stein Riesling is the perfect
companion for an evening on the terrace, a cook-out, a snack
or a "gemuetlich" chat with friends.

Birrificio Le Baladin - Xyauyù (Silver)

….We are entering now a world of magic, surprises, rhythm where the “sin of gluttony” can be committed without remorse. Here, Teo has made the “drawing room beers” or “dreaming beers” brewed with an oxidation process called Solera, coming to an exceptional result. These beers (XYAUYU’) are marked with the three most important metals of gastronomy: gold, silver and copper.

It is advisable to sip and enjoy them on a comfortable sofa, relaxing and daydreaming. The bottle when is opened remains unaltered and can be even drunk and appreciated within a long time.

XYAUYU Etichetta Argento can be accurately compared to a drawing-room sherry.

Teo Musso produces three versions Gold, Silver & Copper label which differ from each other in terms of degree of oxidation allowed and fruity perfumery aromas created.

Brewing process:

Primary fermentation for 25 days The maturation/aging follows the Method Solera ["adjusted by Teo"], wich was developed centuries ago by the Spanish and Portuguese to perfect the aging of their sherry and port.

Teo's Method Solera:

Teo’s objective is to allow Xyauyu to perfectly oxidize during the aging proces of 2.5 years {oxidation plays a critical role in aging port, sherry, as well as our vintage beers - too much oxidation will ruin the liquid - too little will not optimize the change in flavor / aroma during the aging process} .Here’s how Teo's system works: Xyauyu is transfered to a steel vessel with transparent membrane and a "oxygen hat". After several tastings during the 2.5 year aging process Teo decides when it's time to bottle (it all depends upon the oxidation velocity).
